"Assiettes de pays" (local dishes)

Assiette "Concentré de Terroir" Limousin "grillons" (a local type of rillettes made with pork) on rye bread, limousin beef garnished with potatoes mixed with boletus (cèpes) and chestnuts in gravy, carrot flan and cow's head-cheese. Chestnut pancake and homemade chestnut ice-cream. Accompanied by a glass of red AOC Bergerac. Plate child up to 12 years old The special days when the "Pays" is celebrated

Châlus • Market every Friday morning, except when following fair days.
Flavignac • Market every Saturday morning Local producers markets (Farmers' markets) Discover the local producers markets (Farmers' markets) during the summer months: tables and benches are provided to eat some of your purchases on the spot and to spend a friendly evening with the family or with friends. You choose your own menu and the organisers take care of the cooking. The markets are enlivened by musicians.

Sweet specialities based on the chestnut Le Burgou : a hand-made chestnut cake, made with pure butter
The Pie is made with potatoes and filled with chopped pork - or, more traditionally, salt pork leftovers - accompanied by a green salad.
This speciality can be found, mainly during the winter, in all butchers/ delicatessens.
The Monts de Châlus is a land of gastronomy which offers you an array of quality products, which represent genuine know-how. You can taste them at the fairs and markets, during the special days when the "Pays" is celebrated or in the restaurants with the quality label, "Assiettes de Pays".
